Here is my recipe of the famous "Coca de Sant Joan" Enjoy!!
270gr of bread flour
25gr of almond powder
10gr of baker's yeast
60gr of sugar
Pinch of Salt
Cinnamon, lemon peel, 2 tablespoons of anise.
50gr pine nuts
Sugar to decorate
Melt yeast in warm milk, add all other ingredients: beaten egg with sugar, lemon peel, butter, almond powder and finally the flour. Work the dough until it does not stick to fingers (I used a blender type KitchenAid)
Here is the finished cake, right out of the oven, wait till it cool down and Let the party begin!
